Ot Kavurma, genellikle taze otların, özellikle semizotu, pazı veya ıspanak gibi yeşilliklerin doğranarak sote edilmesiyle hazırlanan, zeytinyağı ve sarımsak ile lezzetlendirilen, sağlıklı ve hafif bir yemektir. İsteğe bağlı olarak soğan, biber veya baharatlar da eklenerek çeşitlendirilebilir.

Köz Patlıcan Biber, közlenmiş patlıcan ve biberlerin, kabukları soyulduktan sonra doğranarak zeytinyağı ve sarımsak ile tatlandırıldığı, lezzetli ve hafif bir mezedir. Genellikle soğuk olarak servis edilir ve üzerine maydanoz veya nar ekşisi ile süslenir.

Cinbiber Sarımsak, genellikle közlenmiş cin biberlerinin ve sarımsakların zeytinyağı, limon suyu veya nar ekşisi ile tatlandırılarak servis edildiği, acı ve lezzetli bir Türk mezze çeşididir.

Pastırmalı Humus

Pastırmalı Humus, haşlanmış nohutun, tahin, sarımsak, limon suyu ve zeytinyağı ile birlikte püre haline getirilmesiyle hazırlanan humusun içine ince doğranmış pastırma eklenerek servis edilen, lezzetli ve besleyici bir mezedir. Üzerine zeytinyağı gezdirilerek veya pul biber serpilerek sunulabilir.
